
Ingredients:
1 can artichoke hearts, rinsed and diced
1 basket cherry tomatoes, halved
1/4 diced walnuts
1/2 bunch parsley, finely chopped
2 garlic cloves, diced
juice from two lemons
dash of olive oil.
Mix.
Eat.
Growl at anyone who tries to get you to share.
Eat more.

ReplyDeleteI haven't taken the time to figure out the nutritional content yet, but it should be high in fiber and good fats. The lemon juice makes it so flavorful. It was the salad we served for Christmas, and everyone loved it. I originally saw the ingredients as part of some larger appetizer thing, that involved bread and cheese and other stuff, but I decided these ingredients would taste amazing on their own. And I was right!
ReplyDeleteThe only sucky part is artichoke hearts can be kind of expensive, depending on where you go. I think they're pretty reasonable at Trader Joe's, but Ralphs is a total rip off.
